The simplest, tastiest Chicken Chili recipe around! It’s clean and packed full of bold flavor, with just the right amount of spice. I’ve included both Stove Top and Slow Cooker options because I for one know that some days we have extra time on our hands, and other days we don’t. If you’re able to prepare ahead, my personal preference is the Slow Cooker recipe. But then again I think everything tastes better in the Slow Cooker! And you still can’t beat the Stove Top version. It may cook up quicker, but it wont lack in flavor. I prepare this meal at least once a week for my family, it’s definitely one of our favorites!
EASY CHICKEN CHILI
INGREDIENTS:
3 C Shredded Chicken Breast (See tips below for preparation)
1 1/2 C Pinto Beans
1 1/2 C Kidney Beans
1/2 C Mild Diced Green Chilis
1 Small Onion Diced
2 C Salsa
3 C Chicken Broth
1/2 TSP Butter
1 TSP Minced Garlic
1/2 TSP Cumin
2 TSP Chili Powder
INSTRUCTIONS FOR STOVE TOP:
Saute onion and garlic in butter until softened and browned. Add remaining ingredients and bring to a boil. Reduce heat to low, cover and simmer for 25-30 minutes.
INSTRUCTIONS FOR SLOW COOKER:
This recipe is even easier and tastier in the slow cooker. Saute onion and garlic in butter until softened and browned. Rather than cooking and shredding the chicken ahead of time, place 2 raw chicken breasts in the bottom of the slow cooker. Add remaining ingredients, stir to combine. Cook on low for 6 hours, stirring occasionally. With 2 forks shred the chicken in the soup. Continue cooking on low for 1 more hour.

TIPS:
- To prepare shredded chicken, place 2 chicken breasts in 6 cups of salted water. Bring to a boil and cook until no longer pink, about 10-15 minutes. Use 2 forks to shred the meat.
- You can also use your slow cooker to prepare shredded chicken. Place 2 chicken breasts in 6 cups of chicken broth. Cook on low for 6-7 hours or until no longer pink. Use 2 forks to shred the meat.
- Garnish with sour cream (or in our case Greek yogurt because we ran out of sour cream), shredded cheese, avocado, chives, tortilla strips or diced onions.
