If you’ve followed some of my recent posts, you’ll notice that most of my recipe titles begin with the word “EASY”… like my Easy Chicken Chili for example, or my Easy Breakfast Casserole.
I’ll be the first to admit, I’m a simple cook… You won’t see many fancy words like Fondant, or Consomme lingering in my recipe titles. I learned to cook from my Mother, who learned to cook from her parents. Her Father (my Grandfather) was a Chief in the United States Navy, in charge of the kitchen. He was a fabulous cook. What I loved about his meals were their simplicity. He could take the simplest ingredients and transform them into a comforting, delicious meal.

And so it seems that I’ve followed in Grandpa Bill’s footsteps. Most of my recipes contain less than 10 ingredients and if I can turn it into a one pot meal, even better! This Baked BBQ Chicken is probably the easiest recipe in my book. It contains 4 simple ingredients that you probably have on hand and takes only 1 hour to prepare, you can’t beat that!
EASY BAKED BBQ CHICKEN
Makes 2 Servings
INGREDIENTS:
2 Boneless, Skinless Chicken Breasts
1 TSP Salt
1/2 TSP Garlic Powder
1/2 C BBQ Sauce (We like KC Masterpiece or Jack Daniels)
INSTRUCTIONS:
- Preheat oven to 450 degrees. Grease a large casserole dish.
- BRINE CHICKEN – This step is optional, but strongly recommended. You won’t believe the difference this simple step makes in the juiciness of the meat! In a large bowl or Tupperware, cover the breasts with lukewarm water and add salt. Cover with saran wrap or lid and let set for 30 minutes. You can brine for up to 6 hours, but for anything longer than 30 minutes place the chicken in the fridge. What does it do? The salt helps the breasts retain water, resulting in juicier chicken after cooking!
- Remove the breasts from the water and pat dry. Place directly into the greased casserole dish and sprinkle each breast with 1/4 TSP garlic powder. Cook in the preheated oven for 15 minutes.
- At 15 minutes, brush the breasts with BBQ sauce. Continue baking, reapplying sauce every 5 minutes until chicken is cooked and juices run clear. (About 30-40 minutes)
