Strawberry Banana Blender Muffins

These Strawberry Banana Blender Muffins are Free of Artificial Sugar, Gluten Free, Nut Free, Vegan, and SO delicious! The strawberry and banana flavors really shine through and balance so well with the acidity of orange juice and the natural sweetness of organic agave. They take less than 20 minutes to prepare and contain only 6 simple ingredients that you probably have on hand. They make healthy finger foods for kids, and a fast snack for the busy Mom. They might also be a healthy alternative for bake sale treats!

This recipe was inspired by Happy Healthy Mama’s Strawberry Banana Blender Muffins. Please visit her page for the original recipe. I made a few modifications, so I’m sharing my version below.

Strawberry Banana Blender Muffins

Makes 15 Mini Muffins

Ingredients:

1 C Mashed Banana (About 2 Medium Bananas)

1 C Sliced Strawberries (About 6-8 Strawberries)

1 1/2 C Old Fashioned Oats

3 Tbsp Organic Blue Agave

1 Tbsp Orange Juice (Last minute addition, not shown in the ingredient pictures below)

1 Tsp Vanilla Extract

1/4 Tsp Salt

1 Tsp Baking Powder

Instructions:

  1. Preheat oven to 400 degrees. Spray or grease a mini muffin pan.
  2. Place all ingredients in a blender and blend until smooth.
  3. Fill muffins in pan 3/4 of the way full.
  4. Lower the temperature to 350 degrees and bake for about 10 minutes or until a toothpick entered into the center comes out clean.

Tip: I use my Ninja Master Prep for blending just about everything!

I’ve already begun experimenting with variations of this recipe. I substituted blueberries for strawberries for a blueberry banana muffin… equally delicious! What other combinations do you think might work well?
