These Avocado Egg Salad Wraps are not only delicious, they’re also incredibly nutritious! I’ve combined two protein packed super foods, eggs (6g per serving) and avocado (3g per serving), then paired them with savory bacon, chopped veggies and a dill yogurt sauce. They’re wrapped in a fresh romaine lettuce leaf making these the perfect gluten free snack. Try serving with crackers, or between a grilled bun for an Avocado Egg Salad sandwich!
AVOCADO EGG SALAD WRAPS
Makes 4 Wraps
4 Eggs Hard Boiled, Peeled and Chopped
1 Ripe Avocado, Peeled and Chopped
1/2 C Bacon, Cooked and Chopped (About 4 Slices)
1/2 C Onion, Diced
1/2 C Shaved Carrot (About 1 Carrot)
1/4 C Cucumber, Chopped
4 Romaine Lettuce Leaves
1/4 C Yogurt
1/2 Tsp Dill
1/4 Tsp Salt
1/4 Tsp Pepper
For this recipe, the work lies in the preparation. I tried to chop everything around the same size for a uniformed texture. I cooked the bacon extra crispy for some crunch. Also, I mixed the yogurt and dill together before adding it to the mixture. Combine ingredients, scoop into lettuce leaves and enjoy!
I prepared these as an appetizer for my little family of 3 last night and not only did they vanish within minutes, they were so filling that we skipped dinner! I served them with fresh tomatoes. Here’s a little bonus shot of my precious Dutch! He loves tomatoes and he’s growing up way too fast! Can any other Mamas relate?
