Creamy Avocado Spinach Pasta

DSC_2301

I don’t know about you, but I’m always looking for ways to sneak healthy ingredients into my meals. And if you’re the parent of a picky toddler like I am, this is even more important! Dutch loves pasta, and I’ve had luck in the past sneaking vegetables into pasta sauce. This recipe was so yummy and easy to prepare, I had to share. Enjoy!

Some helpful tips:

This 12 Quart Pasta Steamer Set by Cuisinart will make cooking pasta a breeze. It’s a nice size, has a flavor lock lid, the rim is tapered for easy pouring, and it’s dishwasher safe.

Also, check out this Kitchen Utensil Set by Vremi. I love the bright colors, that they’re BPA free, heat resistant, and dishwasher safe.

CREAMY AVOCADO SPINACH PASTA

Ingredients:

1 Tbsp Butter
2 Garlic Cloves, minced
1/2 C Onion, chopped
3 C lightly packed Spinach
2 ripe Avocados
1/4 C Yogurt (I used Whole Milk Yogurt for this recipe, but I also like Greek Yogurt for the little one because it’s highest in protein)
1/2 C Milk
1 Tbsp fresh Lemon Juice
1/2 Tsp Salt
1/4 C Olive Oil (or enough to reach desired consistency)
1/2 C shredded Mozzarella Cheese
Pasta, of your choice
Fresh, chopped Parsley, to taste
Parmesan Cheese, to taste

Instructions:
  1. Melt butter in a saucepan and sauté garlic and onion until fragrant and soft. Add spinach and cook until soft and wilted, about 3-4 minutes.
  2. Add spinach mixture to food processor/blender. Add avocado, yogurt, milk, lemon juice and salt. Blend until smooth, adding olive oil to reach desired consistency.
  3. Add mixture back to your original saucepan with mozzarella cheese. Cook until cheese is just melted and sauce is heated through.
  4. Serve over pasta. Sprinkle with parsley and parmesan cheese.

    1. I hope you enjoy! I try to always use greek yogurt because it has the most protein! But I remember using whole milk yogurt for this recipe, which I think made it even tastier! 🙂

  1. Reblogged this on Letters To Dutch and commented:

Hey everyone, just popping in to share this little recipe of mine again, which recently went viral on Pinterest (Repinned over 500x)! I originally prepared it for my toddler as a way to sneak some superfoods into his diet. Enjoy!

  2. Hi! Looks yum and my kids love pasta AND avocado, so great idea for sneaking other veggies in. How well does this keep in the fridge (thinking with avocado, it may not be the best for leftovers?) thanks!

    1. Hey Mary, thanks for stopping by! I hope you and your family enjoy this recipe. Ours held up for a day or so in the fridge, but the coloring changed quickly after. It’s such a bummer avocado doesn’t last longer!

    1. Hey Jess, great question! Normally you wouldn’t freeze whole avocados, they turn into a mushy mess. But since the avocado is puréed into the sauce here you should have no problem freezing. The lemon juice in the recipe will actually help prevent browning and maintain freshness when you thaw.
