I don’t know about you, but I’m always looking for ways to sneak healthy ingredients into my meals. And if you’re the parent of a picky toddler like I am, this is even more important! Dutch loves pasta, and I’ve had luck in the past sneaking vegetables into pasta sauce. This recipe was so yummy and easy to prepare, I had to share. Enjoy!
Some helpful tips:

CREAMY AVOCADO SPINACH PASTA
Ingredients:
1 Tbsp Butter
2 Garlic Cloves, minced
1/2 C Onion, chopped
3 C lightly packed Spinach
2 ripe Avocados
1/4 C Yogurt (I used Whole Milk Yogurt for this recipe, but I also like Greek Yogurt for the little one because it’s highest in protein)
1/2 C Milk
1 Tbsp fresh Lemon Juice
1/2 Tsp Salt
1/4 C Olive Oil (or enough to reach desired consistency)
1/2 C shredded Mozzarella Cheese
Pasta, of your choice
Fresh, chopped Parsley, to taste
Parmesan Cheese, to taste
Instructions:
- Melt butter in a saucepan and sauté garlic and onion until fragrant and soft. Add spinach and cook until soft and wilted, about 3-4 minutes.
- Add spinach mixture to food processor/blender. Add avocado, yogurt, milk, lemon juice and salt. Blend until smooth, adding olive oil to reach desired consistency.
- Add mixture back to your original saucepan with mozzarella cheese. Cook until cheese is just melted and sauce is heated through.
- Serve over pasta. Sprinkle with parsley and parmesan cheese.
What a torture….I am starving right now and this looks just toooooo good. Mmmhhh.

What type of yogurt did you use?
I hope you enjoy! I try to always use greek yogurt because it has the most protein! But I remember using whole milk yogurt for this recipe, which I think made it even tastier! 🙂

Do you think you could freeze the sauce in small cubes to be heated up later?
Hey Jess, great question! Normally you wouldn’t freeze whole avocados, they turn into a mushy mess. But since the avocado is puréed into the sauce here you should have no problem freezing. The lemon juice in the recipe will actually help prevent browning and maintain freshness when you thaw.
Can you make this ahead of time….or at least the sauté part with spinach and then putting through food processor to refrigerate a few days before continuing on with the rest of the recipe..
You can definitely prep the spinach ahead of time, but I would suggest adding the avocado fresh. Enjoy!
