Isn’t it the best when you can whip up a killer meal AND clean out your fridge? That’s exactly how this recipe came about. I had meat and vegetables on hand that needed to be cooked, so I decided to get creative and combine the ingredients into one dish. Because you know me, I’m a One Pot Meal kinda gal! For some reason I was craving stir fry that night, so I hopped in front of the stove and 15 minutes later… Voila! I combined ginger ground beef, pan fried rice, and chopped vegetables for the most delicious Beef Stir Fry, then wrapped the mixture in a crisp lettuce wrap for added nutrition, and served them as finger foods!
Beef Stir Fry Lettuce Wraps
Ingredients
2 C Water
1 C White Rice
1 Lb Lean Ground Beef
1/2 C Onion, Diced
1 Garlic Clove, Minced
1/2 Tsp Ground Ginger
1/4 C Soy Sauce
2 Tsp Butter
3 Carrots, Peeled and Finely Chopped
1/4 Head Cabbage, Finely Chopped
1 TBSP Chopped Fresh Cilantro, or 1 Tsp Cilantro Seasoning
Salt & Pepper To Taste
Instructions
- In a medium saucepan, heat 2 cups of water until boiling. Stir in rice, cover and reduce heat to low. Simmer until all water is absorbed, about 15-20 minutes.
- While the rice is cooking, prepare the beef. In a medium bowl combine the ground beef, 2 Tbsp soy sauce, and ginger. Work the ingredients into the meat with your hands until combined. In a large stock pot, saute garlic and onion in 1 tsp butter until fragrant and soft. Add ground beef and cook until no longer pink, breaking into small bits with a spatula. Set the mixture aside to drain.
- In that same pot or pan heat 1 tsp butter. Add carrots, cabbage, cooked rice and the remaining soy sauce. Pan fry on medium to high heat until rice is golden brown and vegetables are soft and tender.
- Add beef mixture to the rice mixture and stir to combine. Eat as is, or wrap in lettuce cups.
