When I was brainstorming items to add to our 2016 Summer Bucket List, I knew homemade ice cream had to be on the list. And with the recent heat wave that has struck Southern California this past week, I was eager to prepare a cold, yummy treat. I began searching for a recipe, considering two things. One, I wanted a healthier version of ice cream that didn’t contain artificial sugars. And two, I wanted a recipe that could be prepared without an ice cream maker.
When I stumbled upon Skinny Mom’s 4-Ingredient Strawberry Banana Ice Cream, I just knew I had to try it. Not only is it simple, it also contains no added sugars and only requires a blender for prep! What could be better than that!? All you have to do is freeze some sliced strawberries and bananas, then blend them in a processor with some heavy cream and vanilla. After a few hours in the freezer, you’ve got yourself a super tasty (and healthier) batch of homemade ice cream!
I followed her recipe exactly, except for one small change. You’ll notice her recipe calls for 2 Tbsp of Heavy Cream… I found that it wasn’t enough. I couldn’t get the mixture to blend together until I added 1/4 Cup. All the other ingredient measurements, however, were spot on.
How does it taste? Delicious, refreshing, perfectly sweet and oh so creamy. You just gotta try it.
Even little Dutch loved it. As you’ll see in this video, he asked me for a “big bite.”
