3 Bean Turkey Chili

This 3 Bean Turkey Chili is a really simple, one pot meal that just bursts with flavor. Second to that, it’s nutritious. It contains beans, ground turkey, and vegetables, making it packed full of protein and fiber. To add to that, it’s gluten free and can be dairy free if you choose to omit the sour cream and shredded cheese garnishments. You even have the option of cooking it on the stovetop last minute, or letting it simmer in the slow cooker all day. Either way, leftovers won’t exist. This recipe is similar to my Easy Chicken Chili, with only a few simple variations. Enjoy!

3 Bean Turkey Chili

Ingredients

1 Lb Lean Ground Turkey

1 Medium Onion, Chopped

1 Garlic Clove, Minced

1/2 C Mild Diced Green Chilies

1 1/2 C Black Beans

1 1/2 C Kidney Beans

1/2 C Peas

1 Small Bag of Mixed Frozen Vegetables

2 C Salsa, Thick and Chunky

1 C Water

1/2 Tsp Cumin

2 Tsp Chili Powder

Instructions

  1. In a stock pot over medium heat, saute the garlic and onion until fragrant and golden brown. Add ground turkey and cook until no longer pink. Set aside to drain.
  2. Return the turkey mixture to the stock pot. Add the remaining ingredients and stir to combine.
  3. Bring to a boil, then reduce heat to low and let simmer for 20-25 minutes. Garnish with avocado, shredded cheese and sour cream.

Try cooking this in your crock pot! Cook the turkey as instructed above, then combine it with the remaining ingredients in your slow cooker. Cook on low for 6-7 hours.
